Heat the two-handled pot over medium heat. Once hot, add the oil, diced onion, and bell pepper. Sautee for 3-4 minutes, stirring frequenty, or until the onion is soft and translucent.
Add the drained beans and rest of the remaining ingredients. Stir to coat and cook on low for 10-15 more minutes to let the flavors meld. Taste and adjust final seasonings as needed. You want this to be very well seasoned, so don't be shy!
